Description
Fresh Mediterranean-inspired chicken salad with creamy whipped feta dressing, crisp vegetables, herbs, and bold Greek flavors.
Ingredients
1 1/4 cups plain whole-milk Greek yogurt
3/4 cup crumbled feta cheese
4 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 garlic clove, minced
5 cups shredded or diced cooked chicken breast
1 1/2 cups diced cucumber
3/4 cup chopped sun-dried tomatoes
1/2 cup chopped Kalamata olives
1/2 cup chopped fresh dill
1/3 cup minced red onion
1/4 cup chopped fresh parsley
1/2 cup crumbled feta cheese
1 tablespoon lemon zest
Instructions
1. Add the Greek yogurt, feta cheese, olive oil, lemon juice, lemon zest, oregano, smoked paprika, salt, black pepper, and garlic to a food processor or blender.
2. Blend for about 1 minute until smooth, creamy, and fluffy.
3. Refrigerate the dressing while preparing the salad.
4. In a large bowl, combine the chicken, cucumber, sun-dried tomatoes, olives, dill, red onion, parsley, feta cheese, and lemon zest.
5. Pour the dressing over the salad and toss gently until evenly coated.
6. Taste and adjust seasoning if desired.
7. Serve chilled with optional avocado, roasted chickpeas, toasted pine nuts, or pickled red onions.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Rotisserie chicken works well for quick preparation.
Serve with pita bread, wraps, crackers, or fresh greens.
