Description
Fresh peach and corn salad with creamy avocado, jalapeños, cilantro, and a bright honey lime dressing. Perfect for summer dinners, cookouts, and fresh seasonal meals.
Ingredients
6 ears of corn
4 peaches, diced or sliced
1/2 cup red onion, finely chopped
1/3 cup fresh cilantro, chopped
1–2 jalapeños, deseeded and thinly sliced
3 large avocados, diced
1/3 cup fresh lime juice
1 1/2 tablespoons honey
Salt and black pepper, to taste
Instructions
1. Cook the corn by grilling, boiling, or roasting until tender. Let cool completely, then cut the kernels from the cobs into a large bowl.
2. Whisk together fresh lime juice, honey, and black pepper in a small bowl until smooth.
3. Add peaches, red onion, cilantro, and jalapeños to the corn.
4. Pour the dressing over the salad and gently toss to coat evenly.
5. Season with salt and additional black pepper if needed.
6. Cover and refrigerate for 15–20 minutes.
7. Fold in diced avocado right before serving and serve chilled.
Notes
Use slightly firm peaches for the best texture.
Add avocado just before serving to prevent browning.
Grilled corn adds extra smoky flavor.
