Ingredients
1/2 cup fresh cilantro, chopped
1/2 cup fresh parsley, chopped
1 tablespoon fresh oregano, chopped
1 small shallot, peeled
2 cloves garlic, peeled
1/2 jalapeño pepper, seeded
1 tablespoon lemon juice
1 tablespoon vinegar
1/2 cup oil
1 teaspoon salt
Fresh ground pepper, to taste
2 lbs boneless chicken thighs
Instructions
1. Prepare the Herb Marinade:
In a food processor, blend together the cilantro, parsley, oregano, shallot, garlic, and jalapeño. Add the lemon juice, vinegar, oil, salt, and pepper, and pulse until everything is finely chopped and well combined.
2. Marinate the Chicken:
Place the chicken thighs in a baking dish, season with salt and pepper, and pour 1/4 cup of the herb marinade over the chicken. Turn the chicken to coat evenly. Marinate in the refrigerator for at least 20 minutes, or up to 24 hours for more flavor.
3. Grill the Chicken:
Preheat your grill to medium-high heat. Remove the chicken from the refrigerator and allow it to come to room temperature. Grill the chicken thighs for 5-6 minutes on each side until they are cooked through and the juices run clear.
4. Serve:
