Ingredients

- 1 lb ground beef (80/20 blend for juiciness)
- Brioche burger buns
- 6โ8 slices of bacon
- 6 slices of Havarti cheese
- Lettuce leaves
- 1 tbsp butter
- 1 tbsp sugar
- 3 sunny-side-up eggs
- Salt and pepper (to taste)
- Thousand Island Dressing:
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp sweet dill relish
- Pickled Onions:
- 1 red onion, thinly sliced
- 2 parts white vinegar
- 1 part water
- 1 tsp seasoning of choice (sugar or a pickling spice blend)
Instructions
- Prepare the Pickled Onions:
- Combine vinegar, water, and seasoning in a bowl or jar. Add the sliced onions and let them sit for at least 15 minutes while you prepare the rest of the meal.
- Toast the Buns:
- Spread butter on the inside of the buns and toast them in a skillet or toaster until golden brown. Set aside.
- Cook the Bacon:
- Fry the bacon in a skillet or bake it in the oven until crispy. Drain on paper towels and set aside.
- Cook the Burger Patties:
- Divide the ground beef into six thin patties. Season both sides with salt and pepper.
- Cook the patties over high heat in a skillet for about 4โ5 minutes per side for medium doneness, pressing occasionally for even cooking.
- Place a slice of Havarti cheese on each patty in the final moments of cooking to let it melt.
- Make the Sunny-Side-Up Eggs:
- In the same skillet, cook the eggs gently until the whites are set but the yolks remain runny.
- Caramelize the Burger Buns (Optional):
- Sprinkle a pinch of sugar on the toasted buns. Use a kitchen torch or broiler to caramelize the sugar until golden brown.
- Assemble the Burgers:
- Start with the bottom bun and layer in this order:
- Lettuce
- Two cheesy burger patties
- Bacon strips
- Sunny-side-up egg
- Pickled onions
- Generous drizzle of Thousand Island dressing
- Top with the caramelized bun.
- Serve:
