- 1/3 cup water
- 1/4 cup brown sugar
- 1/4 cup reserved pineapple juice
- 2 garlic cloves, minced
- 1/2 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- Preheat the oven to 500ยฐF. Lightly grease a 9ร13-inch baking dish or line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, panko breadcrumbs, crushed pineapple, milk, soy sauce, green onions, garlic, ginger, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about the size of a golf ball, and place them in the prepared baking dish or on the baking sheet. You should get around 21 meatballs.
- Bake the meatballs for 15 minutes or until they reach an internal temperature of 165ยฐF.
- While the meatballs cook, prepare the pineapple teriyaki sauce. In a large skillet or saucepan, combine soy sauce, water, brown sugar, pineapple juice, garlic, and ginger. Whisk together over medium heat until the sugar dissolves.
- In a small bowl, mix the cornstarch and water to create a slurry, then add it to the sauce. Continue to simmer for about 5 minutes, or until the sauce thickens.
- Once the meatballs are done, add them to the simmering sauce and toss to coat. Allow the meatballs to simmer for a few more minutes in the sauce.
- Serve the teriyaki chicken meatballs over steamed rice or your favorite side.
