- 2–2.5 lbs. sirloin, strip, or round steak
- 1–2 tablespoons beef seasoning (such as steak seasoning or salt and pepper)
- 4 tablespoons avocado oil (divided)
- For the Gravy:
- 1 large white onion, thinly sliced
- 5 garlic cloves, minced
- 2.5 cups beef broth
- 2 teaspoons Worcestershire sauce
- 1/2 chicken bouillon cube (crumbled)
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder
- 1/4 tsp dried sage
- 1/4 tsp dried thyme
- 1 tsp freshly ground black pepper
- 4 tablespoons butter
- 1/4 cup flour
- Optional Sides:
- Buttered rice or mashed potatoes
- Green beans or salad
Instructions
- In a bowl, combine the beef broth, Worcestershire sauce, crumbled chicken bouillon, garlic powder, mustard powder, sage, thyme, black pepper, and optional kitchen browning sauce. Stir well and set aside.
- Use a meat mallet to tenderize the steaks. Drizzle 2 tablespoons of avocado oil over the steaks and rub them evenly. Season both sides generously with steak seasoning or simply salt and pepper.
- Heat a large (12-inch) cast iron skillet or Dutch oven over medium-high heat. Add a few tablespoons of avocado oil and sear the steaks for about 2 minutes per side, or until they develop a dark golden brown crust. Remove the steaks from the pan and cover with foil to keep warm.
- Lower the heat and add the wine (or deglaze with a bit of water if avoiding wine). Allow it to cook for 2-3 minutes until most of the alcohol evaporates.
- Add the butter to the pan and let it melt. Stir in the sliced onions and minced garlic, sautéing for 2 minutes and scraping up any brown bits left in the pan. Sprinkle the flour over the mixture and cook for 1 more minute.
- Pour the prepared broth mixture into the pan, whisking it into the flour-onion mixture. Bring to a simmer and then return the steaks to the pan, ensuring they are mostly covered by the gravy.
- Reduce the heat to low, cover with a lid (or a baking sheet if no lid is available), and simmer for 2.5 to 3 hours, or until the steaks are fork-tender.
- Before serving, gently lay a paper towel over the surface of the gravy to absorb any excess fat. Repeat as needed.
- Serve the steaks on top of buttery rice or mashed potatoes and pour the rich gravy over the top.
