Description

  • Learn how to make Spicy Cajun Seafood Stew with Shrimp and Fish in this hearty, flavorful recipe full of bold Cajun flavors.

Ingredients

Scale
  • 1 pound skinless redfish fillets or other firm white fish (such as grouper, snapper, swordfish, or halibut)
  • 1 pound shrimp, peeled and deveined (or use crawfish)
  • 3 tablespoons Cajun seasoning, divided
  • 1/3 cup vegetable oil or butter
  • 1/3 cup all-purpose flour
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped (add hotter chilies for extra heat, if desired)
  • 1 stalk celery, chopped
  • 5 cloves garlic, minced
  • 1 tablespoon minced fresh thyme
  • 2 bay leaves
  • 28 ounces chopped tomatoes (canned or fresh)
  • 4 cups seafood stock (or chicken/vegetable stock) – use 6 cups for a soupier stew
  • Hot sauce, to taste
  • Salt and pepper, to taste
  • For garnish: Fresh chopped parsley or green onion, red pepper flakes, extra hot sauce

Instructions

  • Cut the fish into bite-sized pieces and place in a bowl with the shrimp (or crawfish). Sprinkle with 1 tablespoon of Cajun seasoning and refrigerate until ready to use.
  • To make the roux, heat the vegetable oil (or butter) in a large pot or Dutch oven over medium heat. Add the flour and stir continuously to form a smooth mixture. Cook, stirring often to avoid burning, for 20-30 minutes until the roux darkens to the color of chocolate.
  • Add the chopped onion, bell pepper, and celery. Cook, stirring occasionally, for 5-6 minutes until the vegetables soften.
  • Stir in the minced garlic, thyme, and bay leaves, cooking for another minute.
  • Add the remaining Cajun seasoning, chopped tomatoes, seafood stock, hot sauce, salt, and pepper. Reduce the heat to low and simmer for 1 hour, stirring occasionally. (For a deeper flavor, you can simmer for longer.)
  • Increase the heat to medium and add the prepared fish and shrimp. Cook for 10-15 minutes until the seafood is fully cooked and the fish is flaky.
  • Remove the stew from the heat and sprinkle with fresh parsley or green onions and red pepper flakes. Serve hot with extra hot sauce if desired.
