- 1 tablespoon olive oil
- 1 pound sausage, cooked and sliced into coins
- 1 bell pepper, diced
- 2 zucchini, sliced
- 2 ears corn, kernels cut off the cob
- Chili powder, to taste
- Fresh cilantro, chopped for garnish
- Salt, to taste
Instructions
- Cook Sausage:
- Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat.
- Add the sliced sausage to the skillet. Cook for 5 minutes on one side, then flip and cook for about 3 minutes on the other side.
- Remove sausage from skillet to a large plate, leaving some of the oil in the skillet. Reserve any extra oil in a small, heat-proof bowl.
- Prepare Veggies:
- In the same skillet, add the diced bell pepper and cook for about 4 minutes over medium heat. Add reserved oil if needed to prevent sticking. Remove bell pepper to the plate with the sausage.
- In the same skillet, add the sliced zucchini and cook for about 3 minutes over medium heat. Add reserved oil if needed to prevent sticking.
- Slice corn kernels off the cob.
- Assembly:
- In the same skillet, combine the cooked sausage, bell pepper, zucchini, and corn kernels. Mix everything well.
- Add reserved oil from the sausage and mix. Add chili powder to taste and reheat on low heat.
- Remove from heat and top with chopped cilantro.
