Instructions
- Prepare the marzipan:
- Grate the marzipan or cut it into small cubes. If it’s too soft, chill it briefly to make it easier to grate.
- Cream the mixture:
- In a mixing bowl, beat the softened butter, grated marzipan, sugar, almond extract, and a pinch of salt until light and fluffy (about 3–5 minutes).
- Add the eggs:
- Incorporate the eggs one at a time, mixing well after each addition. Make sure the eggs and butter are at room temperature to avoid curdling.
- Mix dry ingredients:
- In a separate bowl, whisk together the flour and baking powder. Gradually fold the dry ingredients into the wet mixture until a smooth batter forms.
- Prepare the apples:
- Peel, core, and thinly slice the apples. If preparing ahead, toss the slices with a little lemon juice to prevent browning.
