Instructions

  • Prepare the marzipan:
  • Grate the marzipan or cut it into small cubes. If it’s too soft, chill it briefly to make it easier to grate.
  • Cream the mixture:
  • In a mixing bowl, beat the softened butter, grated marzipan, sugar, almond extract, and a pinch of salt until light and fluffy (about 3–5 minutes).
  • Add the eggs:
  • Incorporate the eggs one at a time, mixing well after each addition. Make sure the eggs and butter are at room temperature to avoid curdling.
  • Mix dry ingredients:
  • In a separate bowl, whisk together the flour and baking powder. Gradually fold the dry ingredients into the wet mixture until a smooth batter forms.
  • Prepare the apples:
  • Peel, core, and thinly slice the apples. If preparing ahead, toss the slices with a little lemon juice to prevent browning.
  • Prepare the pan:
