- 1/4 cup pomegranate juice
- 2 tbsp low-sodium soy sauce
- 1/2 cup fresh pomegranate seeds
Instructions
- Prepare the Filling
- In a mixing bowl, combine the ground meat, kale, ginger, garlic, green onions, carrots, soy sauce, sesame oil, and a pinch of black pepper. Mix well until evenly combined.
- Assemble the Potstickers
- Lay out one wonton wrapper at a time. Place a tablespoon of the filling in the center of the wrapper. Brush water along the edges of the wrapper, then fold it over the filling to form a half-moon shape. Press the edges together tightly to seal. Repeat with the remaining wrappers.
- Coat with Sesame Seeds
- Place the sesame seeds in a shallow bowl. Lightly brush the bottom of each potsticker with water, then dip into the sesame seeds to coat.
- Cook the Potstickers
- Heat a skillet over medium heat and add a few tablespoons of sesame oil. Once the oil is hot, arrange the potstickers in the skillet, sesame-side down. Cook for 2-3 minutes or until the bottoms are golden. Carefully add 1/4 cup water to the skillet (it may splatter, so step back), then cover immediately. Reduce the heat to medium-low and let the potstickers steam for 5-6 minutes or until the filling is fully cooked.
- Make the Sauce
- In a bowl, stir together the chili sauce, pomegranate juice, soy sauce, and pomegranate seeds. Serve the sauce on the side as a dip for the potstickers.
