  • 4 large mushrooms (such as portobello or BBQ flat mushrooms, slightly larger than burger buns)
  • 2 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tbsp olive oil
  • 4 slices Swiss cheese (or cheese of your choice)
  • For the Onions
  • 3 onions, cut into 1/3-inch rings
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • For the Pink Burger Sauce
  • 2/3 cup mayonnaise (or substitute with sour cream)
  • 2 tbsp ketchup
  • 1 โ€“ 3 tsp Sriracha (adjust for desired spiciness)
  • For the Burgers
  • 4 burger buns (brioche preferred)
  • 8 โ€“ 12 lettuce leaves
  • 2 tomatoes, sliced

Instructions

  • Preheat Oven: Preheat your oven to 450ยฐF (or 425ยฐF if using a convection fan setting).
  • Prepare Garlic Butter: In a microwave-safe bowl, combine the butter, minced garlic, salt, and pepper. Microwave until the butter is melted, about 30 seconds, then stir to mix well.
  • Prepare Mushrooms: Brush the smooth side of the mushrooms with the garlic butter. Place them on a baking sheet, gills side up (stems facing up). Drizzle the remaining garlic butter over the rims and gills of the mushrooms. Add olive oil to each mushroom.
  • Roast the Mushrooms: Roast the mushrooms in the preheated oven for 25 minutes. After 25 minutes, flip the mushrooms over, basting with any juices from the tray. Roast for an additional 10 minutes or until the mushrooms are tender.
  • Cook the Onions: While the mushrooms are roasting, heat 1 tbsp olive oil in a large skillet over high heat. Add the onion rings and cook for 5-7 minutes until softened and lightly golden. Season with a pinch of salt and pepper.
  • Melt the Cheese: Place a slice of Swiss cheese on top of each roasted mushroom and return them to the oven for 3 minutes or until the cheese is melted.
  • Toast the Buns: Split the burger buns and toast them in the oven alongside the mushrooms until lightly golden.
  • Prepare the Pink Sauce: In a small bowl, combine mayonnaise, ketchup, and Sriracha. Stir until well mixed and set aside.
  • Assemble the Burgers: Spread a generous amount of pink sauce on the bottom half of each toasted bun. Layer with lettuce leaves, sliced tomatoes, the roasted mushroom with melted cheese, and caramelized onions. Spread a smaller amount of pink sauce on the top half of the bun, then assemble the burger.
  • Serve: Serve the burgers immediately with a side of crispy French fries or baked potato wedges for a complete meal.
