  • Heat olive oil in a large pot over medium heat. Add shallots, celery, and carrots, stirring frequently, and cook for about 7โ€“8 minutes until softened. Season with a pinch of salt and pepper.
  • 2. Add Garlic and Seasonings:
  • Stir in the garlic, thyme, and Aleppo pepper (or paprika). Sautรฉ for about 1 minute until aromatic.
  • 3. Simmer the Chicken Soup Base:
  • Add the shredded chicken, mixing to coat it evenly with the seasonings. Pour in the chicken broth and bring the soup to a boil. Lower the heat to a gentle simmer and cook uncovered for about 40 minutes. Adjust seasoning as needed.
