  • 1 pound chicken tenderloins or breasts, cut into bite-size pieces
  • 1 pound baby potatoes, halved
  • 1 ยฝ teaspoons paprika
  • 1 ยฝ teaspoons poultry seasoning
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ยฝ cup garlic parmesan wing sauce
  • 1 cup shredded mozzarella

Instructions

  • Preheat the oven to 400ยฐF and set out a baking sheet.
  • In a large bowl, combine chicken pieces with one tablespoon of olive oil.
  • In another large bowl, toss the potatoes with the remaining olive oil.
  • In a small bowl, mix paprika, poultry seasoning, and black pepper. Sprinkle half over the chicken and half over the potatoes, tossing to coat.
  • Spread the potatoes on the baking sheet and roast for 20 minutes.
  • While potatoes roast, cook chicken in a skillet over medium-high heat until browned and cooked through, about 7-10 minutes.
  • Add butter and garlic to the chicken, stirring to combine.
  • Mix in the roasted potatoes and turn off the heat.
  • Stir in the garlic parmesan sauce, then top with shredded mozzarella. Cover and let cheese melt, about 5 minutes.
