  • 1 heaping cup shredded sharp cheddar cheese
  • Garnishes: sliced green onions, extra shredded cheddar cheese
  • Optional: croutons or toasted sourdough bread for serving

Instructions

  • Prepare for Roasting:
  • Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper. Spread the cauliflower florets on the sheet, drizzle with 1-2 tablespoons of olive oil, and season with salt and pepper. Toss to coat evenly.
  • Roast the Garlic:
  • Remove the outer papery layers of the garlic head, leaving the skins on the individual cloves. Cut about ยผ inch off the top to expose the cloves. Drizzle the exposed garlic with olive oil, wrap it loosely in foil, and place it on the baking sheet with the cauliflower.
  • Roast the Vegetables:
  • Roast the cauliflower and garlic for 30-35 minutes, flipping the cauliflower halfway through, until golden and caramelized.
  • Cook the Onion:
  • While the vegetables roast, heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sautรฉ for 5-8 minutes until softened and translucent.
  • Blend the Soup:
  • Once the vegetables are done roasting, transfer the cauliflower, onion, and vegetable broth to a blender. Allow the garlic to cool slightly, then squeeze the roasted cloves out of their skins and add them to the blender. Blend until smooth and creamy, about 1 minute. Pour the blended soup back into the pot.
  • Simmer and Finish:
  • Place the pot over medium heat and bring the soup to a gentle simmer. Stir in the shredded cheddar cheese until melted and smooth. Let the soup simmer for 10-15 minutes. Taste and adjust seasonings as needed.
