Ingredients

- For the Dressing:
- 2 tbsp light soy sauce
- 3 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp neutral oil (like grapeseed or canola)
- 1 tsp sugar
- 1 1/2 tsp fresh ginger, grated or finely chopped
- 1 garlic clove, minced
- 1/2 tsp black pepper
- For the Salad:
- 4 cups Chinese cabbage (Napa cabbage), finely shredded
- 1 1/2 cups red cabbage, finely shredded
- 1 cup carrot, finely julienned
- 2 cups cooked chicken, shredded
- 1/2 cup shallots or scallions, thinly sliced diagonally
- For Garnishes:
- 1/2 to 1 cup crunchy noodles
- 1 – 2 tsp sesame seeds
Instructions
- In a jar, combine all the dressing ingredients. Shake well to mix. Let it sit for 10 minutes to allow the flavors to blend.
- In a large bowl, combine the shredded Chinese cabbage, red cabbage, carrot, chicken, and shallots (or scallions). Add half of the crunchy noodles to the bowl.
- Drizzle the dressing over the salad ingredients and toss well to coat evenly.
- Divide the salad into serving bowls. Top with the remaining crunchy noodles and sprinkle sesame seeds on top. Serve immediately and enjoy!
