Ingredients

  • 3 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 tbsp neutral oil (like grapeseed or canola)
  • 1 tsp sugar
  • 1 1/2 tsp fresh ginger, grated or finely chopped
  • 1 garlic clove, minced
  • 1/2 tsp black pepper
  • For the Salad:
  • 4 cups Chinese cabbage (Napa cabbage), finely shredded
  • 1 1/2 cups red cabbage, finely shredded
  • 1 cup carrot, finely julienned
  • 2 cups cooked chicken, shredded
  • 1/2 cup shallots or scallions, thinly sliced diagonally
  • For Garnishes:
  • 1/2 to 1 cup crunchy noodles
  • 12 tsp sesame seeds

Instructions

  • In a jar, combine all the dressing ingredients. Shake well to mix. Let it sit for 10 minutes to allow the flavors to blend.
  • In a large bowl, combine the shredded Chinese cabbage, red cabbage, carrot, chicken, and shallots (or scallions). Add half of the crunchy noodles to the bowl.
  • Drizzle the dressing over the salad ingredients and toss well to coat evenly.
  • Divide the salad into serving bowls. Top with the remaining crunchy noodles and sprinkle sesame seeds on top. Serve immediately and enjoy!
