Instructions

  • Preheat your oven to 350°F.
  • Chop the almonds finely.
  • In a medium bowl, mix together the flour, powdered sugar, and chopped almonds. Cut the softened butter into small cubes and add it to the mixture. Use a pastry cutter or knife to blend the butter into the flour mixture until it becomes crumbly.
  • Press the mixture firmly into the bottom of a 13×9-inch baking pan. Bake for 20-25 minutes or until lightly golden and set.
  • While the crust is baking, beat the cream cheese with an electric mixer until smooth and fluffy. Add the sugar and eggs, mixing until well blended. Beat in the pineapple juice until smooth.
