- 1/2 cup bread crumbs
- 2 tablespoons honey, divided
- 2 tablespoons Dijon mustard, divided
- 2 boneless, skinless chicken breasts, halved horizontally into thinner pieces
- Salt and pepper, to taste
- 1 tablespoon olive oil or vegetable oil
- 1 tablespoon butter
- For the Sauce:
- 3 tablespoons bourbon
- 1/4 cup heavy cream
- 1/4 teaspoon cayenne pepper
- 1/3 cup chopped pecans
- 1 tablespoon butter
Instructions
- Prepare the Coating:
- Mix the finely chopped pecans and bread crumbs in a large resealable plastic bag.
- Season and Coat the Chicken:
- In a small bowl, combine 1 tablespoon of honey and 1 tablespoon of Dijon mustard.
- Season the chicken pieces with salt and pepper, then brush both sides with the honey-mustard mixture.
- Place each chicken piece in the bag with the pecan-breadcrumb mixture. Seal the bag and shake to coat evenly.
- Cook the Chicken:
- Preheat your oven to 375°F (190°C).
- Heat the oil and 1 tablespoon of butter in a large skillet over medium heat. Sear the chicken until golden brown on both sides.
- Transfer the chicken to a casserole dish and bake for 10–12 minutes, or until fully cooked through.
- Make the Sauce:
- Wipe the skillet clean. Add bourbon, the remaining honey and Dijon mustard, heavy cream, cayenne pepper, and chopped pecans.
- Simmer the mixture for 2–3 minutes until slightly thickened. Remove from heat and stir in 1 tablespoon of butter until melted.
- Adjust seasoning with salt and pepper to taste.
- Serve:
- Pour the warm bourbon cream sauce over the cooked chicken. Enjoy with your favorite sides!
