  • 2 boneless, skinless chicken breasts, halved horizontally into thinner pieces
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or vegetable oil
  • 1 tablespoon butter
  • For the Sauce:
  • 3 tablespoons bourbon
  • 1/4 cup heavy cream
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup chopped pecans
  • 1 tablespoon butter

Instructions

  • Prepare the Coating:
  • Mix the finely chopped pecans and bread crumbs in a large resealable plastic bag.
  • Season and Coat the Chicken:
  • In a small bowl, combine 1 tablespoon of honey and 1 tablespoon of Dijon mustard.
  • Season the chicken pieces with salt and pepper, then brush both sides with the honey-mustard mixture.
  • Place each chicken piece in the bag with the pecan-breadcrumb mixture. Seal the bag and shake to coat evenly.
  • Cook the Chicken:
  • Preheat your oven to 375°F (190°C).
  • Heat the oil and 1 tablespoon of butter in a large skillet over medium heat. Sear the chicken until golden brown on both sides.
  • Transfer the chicken to a casserole dish and bake for 10–12 minutes, or until fully cooked through.
  • Make the Sauce:
  • Wipe the skillet clean. Add bourbon, the remaining honey and Dijon mustard, heavy cream, cayenne pepper, and chopped pecans.
  • Simmer the mixture for 2–3 minutes until slightly thickened. Remove from heat and stir in 1 tablespoon of butter until melted.
  • Adjust seasoning with salt and pepper to taste.
  • Serve:
  • Pour the warm bourbon cream sauce over the cooked chicken. Enjoy with your favorite sides!
