Ingredients

  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 16 oz mushrooms, chopped
  • 1 tablespoon mayonnaise
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 garlic clove, minced
  • ½ cup grated Parmesan cheese
  • 1 to 1 ½ cups shredded mozzarella cheese
  • 1 package puff pastry, thawed
  • 1 egg (for egg wash)

Instructions

  • Prepare the Ingredients:
  • Chop the onion and mushrooms, and set them aside.
  • Sauté the Vegetables:
  • Heat the olive oil in a skillet over medium-high heat. Add the chopped onion and cook until translucent. Add the mushrooms and continue cooking until they are tender and the liquid has evaporated.
  • Mix the Filling:
  • Stir in the mayonnaise, salt, black pepper, minced garlic, and Parmesan cheese into the mushroom mixture. Combine everything well.
  • Prepare the Puff Pastry:
  • Roll out two sheets of puff pastry, each to approximately 12×16 inches.
  • Assemble the Pinwheels:
  • Divide the mushroom mixture between the two puff pastry sheets, spreading it out in a thin, even layer. Sprinkle shredded mozzarella cheese on top. Roll each puff pastry sheet tightly from the longer side to form two rolls.
  • Bake:
  • Preheat your oven to 365°F (185°C). Line a baking sheet with parchment paper. Place the rolls on the sheet and brush them with the egg wash. Slice each roll into 1-inch pinwheels and arrange them flat on the sheet.
  • Cook:
  • Bake for 30-40 minutes until the pinwheels are golden brown and puffed up. Serve warm and enjoy!
