- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 3 tbsp olive oil
- 1 shallot, chopped
- 2 cloves garlic, finely chopped or grated
- 1 tbsp fresh rosemary, chopped (or 2 tsp dried)
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and black pepper, to taste
- 1 lemon, cut into wedges, plus 2 tbsp fresh lemon juice
- 1 avocado, diced
- 4 slices thick-cut bacon, cooked and crumbled
- 4 naan or pita breads, warmed
- Lettuce and tomato slices, for serving
- Honey Feta Sauce
- 6 oz feta cheese
- Juice of 1 lemon
- 1 tsp honey
- Red pepper flakes, to taste
- 1/4 cup fresh herbs, chopped (such as dill, basil, or parsley)
Instructions
- Prepare the Chicken
- Preheat your oven to 425ยฐF (220ยฐC).
- On a baking sheet, toss the chicken pieces with olive oil, shallot, garlic, rosemary, paprika, chili powder, salt, and pepper. Add the lemon wedges to the tray.
- Bake for 15 minutes, stir, then bake an additional 5-10 minutes, or until the chicken is cooked through.
- Switch the oven to broil and broil the chicken for 1-2 minutes to lightly char the edges. Keep a close eye to prevent burning.
- Make the Honey Feta Sauce
- In a food processor, blend the feta, lemon juice, honey, and red pepper flakes until smooth.
- Stir in the chopped herbs and drizzle with a little olive oil for extra flavor.
- Assemble the Wraps
- Spread or drizzle the honey feta sauce over each naan or pita.
- Add lettuce and tomato slices, then layer on the roasted chicken, diced avocado, and crumbled bacon.
- Top with an additional drizzle of feta sauce and garnish with fresh herbs if desired.
