Ingredients

  • 2 lbs baby potatoes, halved or quartered
  • 6 slices bacon, chopped
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional garnish)

Instructions

1. Prep the Potatoes and Bacon:

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil.

2. Season the Potatoes:

  • In a bowl, toss potatoes with olive oil, smoked paprika, thyme, salt, and pepper.

3. Roast the Potatoes and Bacon:

  • Spread potatoes on the baking sheet and top with bacon pieces.
  • Roast for 30-35 minutes, stirring halfway through, until golden and crispy.

4. Make the Honey Glaze:

  • Combine honey, Dijon mustard, and minced garlic in a small bowl.

5. Glaze and Finish:

  • Drizzle glaze over roasted potatoes, toss, and return to oven for 5-7 minutes.

6. Garnish and Serve:

  • Sprinkle parsley on top before serving.

Notes

 Tips:

  • For a spicy kick, add a pinch of chili flakes.
  • Substitute baby potatoes with sweet potatoes for extra sweetness.
