- 2 lbs baby potatoes, halved or quartered
- 6 slices bacon, chopped
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional garnish)
Instructions
1. Prep the Potatoes and Bacon:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or foil.
2. Season the Potatoes:
- In a bowl, toss potatoes with olive oil, smoked paprika, thyme, salt, and pepper.
3. Roast the Potatoes and Bacon:
- Spread potatoes on the baking sheet and top with bacon pieces.
- Roast for 30-35 minutes, stirring halfway through, until golden and crispy.
4. Make the Honey Glaze:
- Combine honey, Dijon mustard, and minced garlic in a small bowl.
5. Glaze and Finish:
- Drizzle glaze over roasted potatoes, toss, and return to oven for 5-7 minutes.
6. Garnish and Serve:
- Sprinkle parsley on top before serving.

Tips:
- For a spicy kick, add a pinch of chili flakes.
- Substitute baby potatoes with sweet potatoes for extra sweetness.
