  • 1 pound ground beef
  • 2 cups beef broth, divided
  • 1 small onion, chopped
  • Garlic powder, salt, and black pepper to taste
  • 2 tablespoons cornstarch

Instructions

  • For the Mashed Potatoes:
  • Fill a medium pot with water, add salt, and bring to a boil over medium-high heat. Add the cut potatoes and boil for 7 to 8 minutes or until they can be easily pierced with a fork.
  • While the potatoes boil, heat butter and milk in a small saucepan over medium heat, whisking occasionally, until the butter is completely melted. Alternatively, heat butter and milk in a microwave-safe bowl in 30-second bursts, whisking between each, until the butter is fully melted.
  • Drain the potatoes and return them to the pot on an unused burner to dry out.
  • Mash the potatoes to the desired consistency. Gradually stir in the butter-milk mixture, ensuring all liquid is incorporated. Season with garlic powder, salt, and black pepper, stirring well. Set aside.
  • For the Ground Beef and Gravy:
  • 5. In a small bowl, mix cornstarch with ¼ cup of beef broth until smooth. Set aside.
  • 6. Heat a large skillet over medium heat. Add ground beef and cook until no longer pink. Drain any excess liquid.
  • 7. Add the remaining 1 ½ cups beef broth, chopped onion, garlic powder, salt, and black pepper to the skillet. Simmer for 5 to 10 minutes until the onion is tender.
  • 8. Gradually whisk in the cornstarch mixture, bring to a boil, and cook for 2 more minutes until the gravy thickens.
  • To Serve:
  • 9. Divide the mashed potatoes among serving bowls. Top each with a generous portion of the ground beef and gravy. Serve warm, with additional gravy if desired.
