Ingredients

1 large cucumber, diced
1 pint grape tomatoes, halved
1 green bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, halved
4 ounces feta cheese, crumbled
Salt and pepper, to taste
Greek Salad Dressing:
1/4 cup lemon juice (from about 2 lemons)
1 teaspoon Dijon mustard
2 garlic cloves, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup olive oil

Instructions

Prepare the Salad:
In a large mixing bowl, combine the diced cucumber, halved grape tomatoes, diced bell pepper, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
Make the Dressing:
In a small bowl, whisk together the lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Slowly drizzle in the olive oil while whisking until the dressing is emulsified.
Dress the Salad:
Pour the dressing over the salad and gently toss to combine. Adjust the seasoning with additional salt and pepper, if needed.
Serve:
Serve immediately or refrigerate for 15-30 minutes to let the flavors meld.
