  • 1/2 cup freshly grated or shredded Parmesan cheese
  • 1 tablespoon freshly minced parsley
  • Optional: Additional Parmesan for garnish

Instructions

  • Prepare the Chicken:
  • Season chicken tenders generously on both sides with your preferred poultry seasoning (Cajun seasoning works well). Heat a skillet over medium-high heat with olive oil. Sear the chicken for about 3 minutes per side, flipping only once. Reduce the heat to low as the chicken cooks through.
  • Make Garlic Butter:
  • Add 2 tablespoons butter and 1 tablespoon garlic to the skillet. Sauté the garlic for about 1 minute until fragrant, scraping up any browned bits from the pan. Toss the chicken in the garlic butter until evenly coated, then remove the chicken and tent it with foil to keep warm.
  • Prepare the Wine Sauce:
  • To the same skillet, add 4 tablespoons butter and 1 tablespoon garlic. Sauté until fragrant. Pour in the white wine and simmer for 3-5 minutes until slightly reduced. Scoop out 1/3 cup of the pan juices and set aside for later.
  • Cook the Rice:
  • Increase the skillet heat to medium and add the uncooked rice. Stir frequently to toast the rice for about 5 minutes.
