- ยฝ teaspoon ground cumin
- ยฝ teaspoon chili powder (optional)
- Before Serving:
- 1 pint grape tomatoes, halved (drained if needed)
- ยผ cup green onions, sliced
- ยผ cup fresh cilantro, finely chopped (plus extra for garnish)
- For Serving:
- 1 avocado, diced (optional)
- Crackers (optional)
- Tortilla chips (optional)
Instructions
- In a small bowl, whisk together the olive oil, red vinegar, lime juice, garlic, black pepper, salt, cumin, and chili powder (if using) to make the dressing.
- In a large mixing bowl, combine the black beans, black-eyed peas, sweet corn, chopped red pepper, and jalapenos. Pour the dressing over the mixture and toss well until everything is evenly coated.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the flavors to blend.
- About 30 minutes before serving, stir in the halved grape tomatoes, sliced green onions, and fresh cilantro.
- Serve chilled, topped with diced avocado, crackers, and tortilla chips if desired.
