- 1 tablespoon honey
- 3/4 teaspoon active dry yeast (optional; see note)
- 3/4 cup warm whole milk
- 1 cup full-fat plain Greek yogurt
- 4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 8 tablespoons (1 stick) salted butter, melted and divided
- 2โ4 cloves garlic, grated
- 3/4 cup chopped fresh herbs (such as parsley, cilantro, chives, and/or dill)
Instructions
- Activate the Yeast:
- In a stand mixer bowl, combine the warm water, honey, and yeast. Let it sit for 5-10 minutes until bubbles form on the surface.
- Prepare the Dough:
- Add the milk, yogurt, flour, baking powder, baking soda, and salt to the bowl. Using a dough hook, mix until everything is incorporated (2-4 minutes). The dough will be sticky. Lightly dust it with flour and shape it into a ball with your hands. Cover the bowl with plastic wrap and let it rise in a warm spot for 1 hour, or refrigerate overnight if making ahead.
- Shape the Dough:
- Once the dough has doubled, divide it into 8 equal portions. Roll each piece into a large oval about 8 inches long and 1/4-inch thick.
- Cook the Naan:
- Heat a large cast iron skillet over medium-high heat until very hot. Brush both sides of each naan with half of the melted butter. Lightly drizzle a teaspoon of olive oil in the skillet and use a paper towel to evenly coat the surface.
- Place a piece of dough on the skillet, cover it with a lid, and cook for 1 minute until bubbles form. Flip the naan and cook uncovered for 1-2 more minutes, until you see golden spots. Remove the naan from the skillet and wrap it in a clean kitchen towel. Repeat with the remaining dough.
- Make the Garlic Herb Butter:
- Melt the remaining butter in a small pan over low heat, adding the grated garlic. Allow it to lightly brown, then remove from heat and stir in the chopped herbs.
- Serve:
- Brush the warm naan with the garlic herb butter and serve immediately. These taste best fresh, but leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.

- Yeast is optional; without it, the naan will be slightly less fluffy but still delicious.
