- 2 filet mignon steaks (8โ10 oz., 1 1/2 โ 2 inches thick)
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 sprigs fresh thyme
- 2 garlic cloves, smashed
- Garlic powder
- Onion powder
- Salt
- Pepper
- Shrimp & Lobster Sauce:
- 2 medium lobster tails, shell removed, cut into 1-inch pieces
- 1 lb large shrimp, peeled and deveined
- All-purpose seasoning (salt, pepper, paprika, garlic powder, onion powder)
- 1 tbsp olive oil
- 8 tbsp unsalted butter
- 1/4 cup clam juice
- 1 1/2 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 1/2 tsp smoked paprika
Instructions
- For the Steak:
- Season each side of the filet mignon steaks with salt, pepper, garlic powder, and onion powder.
- Heat a cast-iron skillet over medium-high heat and add olive oil. Once the oil is hot, place the steaks in the skillet and press them down gently.
- Cook for 2 minutes on one side. After 2 minutes, add butter, garlic cloves, and thyme sprigs to the skillet.
- Continue to cook for another 3 minutes before flipping the steaks. Cook the other side for 4 minutes.
- Reduce heat to medium, and while the steaks cook, spoon the butter and aromatics over the steaks for the final few minutes of cooking.
- Use an instant-read thermometer to check the internal temperature of the steak. It should be 5 degrees lower than your desired doneness. The steak will continue to cook as it rests.
- Let the steaks rest for at least 10 minutes before serving.
- For the Shrimp & Lobster Sauce:
- In a bowl, lightly season the shrimp with all-purpose seasoning (be cautious not to over-season).
- Heat olive oil and 1 tbsp butter in a 10-inch skillet over medium heat. Add the shrimp and sear for 2 minutes on one side. Flip the shrimp and cook for another 1 minute. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of butter and cook the lobster pieces until they turn pink (about 3 minutes). Remove from the skillet and set aside.
- Add 6 tbsp of butter to the skillet. Once the butter starts to melt, add the clam juice and bring to a simmer.
- Slowly whisk in the heavy cream and continue to simmer. Stir in salt, pepper, garlic powder, onion powder, and smoked paprika. Let the sauce simmer for about 10 minutes, stirring occasionally to prevent it from boiling over. The sauce should thicken.
- Taste and adjust seasoning if needed.
- Stir the cooked shrimp and lobster into the sauce, allowing it to simmer for an additional 1-2 minutes.
- Pour the sauce over the rested steaks and serve immediately.
