Ingredients

Scale
  • 5 russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cracked black pepper
  • 5 slices bacon (center cut preferred)
  • 3 cloves garlic, minced
  • 1 tablespoon shallot, finely chopped
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour (or gluten-free flour)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups chicken stock
  • 2 cups beef stock
  • 2 cups cheese curds (cheddar recommended)
  • 1/4 cup chopped chives

Instructions

  • Preheat the oven to 450°F.
  • Wash and dry the russet potatoes. Cut them into ¼-inch thick strips lengthwise. Toss the potato strips in a large bowl with olive oil, paprika, and cracked black pepper until evenly coated.
  • Arrange the seasoned potatoes in a single layer on a foil-lined baking sheet. Bake on the middle rack for about 20 minutes, or until the fries are crispy and golden.
  • While the fries bake, prepare the gravy. In a large saucepan, cook the bacon over medium heat until crispy. Once done, remove the bacon and chop it roughly, leaving the bacon drippings in the pan.
  • In the same pan with bacon drippings, sauté the minced garlic and chopped shallot for about 30 seconds. Add the butter and cook until melted.
  • Stir in the flour to form a roux, and cook for about 4 minutes, stirring frequently.
  • Gradually add the chicken stock, beef stock, salt, and pepper. Bring the mixture to a simmer. Reduce the heat to low and cook uncovered for 20 minutes, stirring often.
  • Once the fries are crispy, remove them from the oven and season with a pinch of salt and pepper.
  • Arrange the fries on a serving platter. Sprinkle with cheese curds and chopped bacon, then drizzle the hot gravy over the top. Garnish with fresh chives.
