Instructions
- Preheat the oven to 450°F.
- Wash and dry the russet potatoes. Cut them into ¼-inch thick strips lengthwise. Toss the potato strips in a large bowl with olive oil, paprika, and cracked black pepper until evenly coated.
- Arrange the seasoned potatoes in a single layer on a foil-lined baking sheet. Bake on the middle rack for about 20 minutes, or until the fries are crispy and golden.
- While the fries bake, prepare the gravy. In a large saucepan, cook the bacon over medium heat until crispy. Once done, remove the bacon and chop it roughly, leaving the bacon drippings in the pan.
- In the same pan with bacon drippings, sauté the minced garlic and chopped shallot for about 30 seconds. Add the butter and cook until melted.
- Stir in the flour to form a roux, and cook for about 4 minutes, stirring frequently.

- Arrange the fries on a serving platter. Sprinkle with cheese curds and chopped bacon, then drizzle the hot gravy over the top. Garnish with fresh chives.
