- 1 pound penne pasta, cooked
- 1 cup reserved starchy pasta water
- 1 tablespoon olive oil
- 2 shallots, diced
- Kosher salt and pepper, to taste
- 8 ounces fresh baby spinach
- 4 garlic cloves, minced
- 2 jars (12 ounces each) artichoke hearts, drained and coarsely chopped
- 8 ounces cream cheese, at room temperature
- 8 ounces shredded mozzarella cheese
- 1 cup freshly grated Parmesan cheese, plus extra for serving
Instructions
- Bring a large pot of salted water to a boil. Cook the penne pasta according to package directions. Once done, reserve 1 cup of the pasta water before draining.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced shallots, season with a pinch of salt and pepper, and sautรฉ until softened, about 3 minutes.
- Add the spinach to the skillet. You may need to do this in batches to avoid overcrowding. Stir and cook until the spinach wilts, about 5 to 6 minutes. Once wilted, stir in the minced garlic and cook for another 30 seconds.
- Stir in the cream cheese and cook, stirring constantly, until fully melted and smooth.
- Gradually add in ยพ of the reserved pasta water, stirring to combine. Then, add the cooked penne pasta, most of the shredded mozzarella, and the chopped artichokes. Mix well until the pasta is evenly coated and some cheese has melted into the sauce.
- Preheat your broiler to high.
- Sprinkle the remaining mozzarella cheese evenly over the top of the pasta mixture. Place the skillet under the broiler for 2 to 3 minutes, keeping a close eye on it to prevent burning. It may need an extra minute or two depending on your broiler.
- Once the top is golden and bubbly, remove from the oven and let it cool slightly. Serve with a sprinkle of Parmesan cheese.
