- 30 oz frozen chopped spinach, thawed and well-drained (3 bags)
- 2 tbsp salted butter
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 pinch ground nutmeg
- 4 oz cream cheese, softened
- 1/2 cup shredded Gruyere cheese
- 1 cup grated Parmesan cheese, divided
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Preheat the Oven: Set your oven to 375°F and strain the excess water from the thawed spinach.
- Sauté the Onion: In a large skillet or cast-iron pan, melt the butter over medium heat. Add the diced onion and a pinch of salt, then sauté for about 7 minutes until the onion becomes caramelized.
- Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
- Make the Creamy Sauce: Pour in the heavy cream, followed by the cream cheese, nutmeg, salt, and pepper. Let the mixture simmer over medium-low heat, stirring occasionally, until it thickens.
- Stir in the Cheese: Gradually add 3/4 cup of grated Parmesan cheese, stirring until it becomes smooth. Then, add the Gruyere cheese and stir until it melts into the sauce.
- Add the Spinach: Fold in the drained spinach and mix well to combine. Taste and adjust seasoning if needed.
- Top and Bake: Sprinkle the remaining Parmesan cheese over the top and transfer the skillet to the oven. Bake for 10 minutes, or until the top is golden brown and bubbly.
