  • 3 tablespoons extra virgin olive oil, divided
  • 3 large sweet onions, halved and sliced
  • 1 tablespoon fresh garlic, minced
  • 1 ยฝ teaspoons kosher salt
  • ยฝ teaspoon freshly ground black pepper
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 8 ounces button mushrooms, sliced
  • 1 ยฝ cups white rice (uncooked)
  • 2 cups fresh baby spinach
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3โ€“4 cups cooked chicken (shredded or diced)
  • 4 ounces Gruyรจre cheese, shredded

Instructions

  • In a large nonstick skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium-low heat.
  • Add the sliced onions to the pan and cook untouched for 15 minutes. Stir, then continue cooking for an additional 15 minutes, or until onions are caramelized and golden brown. If needed, cook for another 10-15 minutes.
  • Once the onions are caramelized, add minced garlic, salt, pepper, tarragon, and thyme. Cook for 1 minute, stirring frequently.
  • Stir in Worcestershire sauce and remove the skillet from the heat. Set the caramelized onions aside.
  • In a separate pan, cook the mushrooms over medium-high heat without adding any fat. Stir occasionally until the mushrooms are browned, about 5-10 minutes.
  • Once the mushrooms are cooked, add the remaining butter and olive oil. Stir in the uncooked rice and cook for about 5 minutes, allowing the rice to lightly brown.
  • Add the spinach and cook until it wilts, about 1 minute.
  • Pour in the chicken broth and bring the mixture to a simmer. Once it starts to simmer, reduce the heat to low, cover, and cook for 15 minutes.
  • After 15 minutes, remove the lid and stir in the heavy cream and cooked chicken. Heat through until the mixture is hot.
  • Preheat your ovenโ€™s broiler.
  • Spray a 9ร—13-inch casserole dish with cooking spray and pour in the rice mixture. Top with the caramelized onions and then sprinkle with the shredded Gruyรจre cheese.
  • Place the casserole under the broiler and cook for 3-5 minutes, or until the cheese is melted, bubbly, and lightly browned.
  • Serve immediately.
