- 1½ cups packed light brown sugar (298g)
- 2 large eggs, lightly beaten
- 2 tsp vanilla extract
- 1 tsp orange zest, finely grated (3g)
- ¾ cup dried cranberries (100g)
- 1⅓ cups white chocolate, chopped or chips (227g)
- Frosting:
- 1⅔ cups white chocolate, melted (283g)
- 8 oz cream cheese, softened (227g)
- 1½ cups powdered sugar, sifted (170g)
- 1 tsp vanilla extract
- 1 tbsp orange juice
- 1 tsp orange zest, finely grated (3g)
- Topping:
- ½ cup dried cranberries, roughly chopped (65g)
- ⅔ cup white chocolate, melted (113g)
Instructions
- Prepare the Blondie Base:
- Preheat the Oven: Set your oven rack to the middle position and heat to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper, leaving an overhang for easy lifting.
- Brown the Butter: Melt butter over medium heat, stirring until it foams and milk solids turn golden brown. Remove from heat and transfer to a bowl to cool.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Combine Wet Ingredients: Mix the cooled browned butter and brown sugar until smooth. Add eggs, vanilla, and orange zest, mixing well.
- Fold Together: Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in white chocolate and cranberries.
- Bake: Spread batter evenly in the prepared pan. Bake for 18-22 minutes, or until the edges are golden and the top is set. Cool completely on a wire rack.
- Prepare the Frosting:
- In a bowl, mix softened cream cheese, melted white chocolate, powdered sugar, vanilla, orange juice, and orange zest until smooth and fluffy.
- Assemble and Add Toppings:
- Frost: Spread the frosting evenly over the cooled blondie base.
- Top It Off: Sprinkle chopped cranberries on top, then drizzle with melted white chocolate for a decorative finish.
- Serve:
- Refrigerate until the frosting sets, about 30 minutes. Use the parchment overhang to lift the blondies out, and slice into triangles or desired shapes. Store in an airtight container in the refrigerator for up to 5 days.
