  • 6 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 1 stalk celery, diced
  • 1/3 cup sour cream
  • Salt and pepper to taste
  • Buttery potatoes or rice for serving
  • Optional Poultry Seasoning:
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion granules
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried sage
  • Cheesy Mashed Potatoes (optional):
  • 4 lbs russet potatoes
  • 3/4 tsp salt
  • 1.5 cups half and half, warmed
  • 1 stick salted butter, softened
  • 3/4 cup shredded Monterey Jack cheese
  • 1 tsp garlic powder
  • Pepper to taste

Instructions

  • Cook the Chicken:
  • In a bowl or zip-top bag, combine chicken with 2 tablespoons olive oil and optional poultry seasoning. Set aside.
  • Heat 2 tablespoons olive oil in a skillet over medium heat; add chicken. Cook until browned on one side, then flip.
  • Reduce heat, add butter, and cook until internal temperature reaches 165ยฐF.
  • Remove chicken, cover with foil to rest.
  • Make the Gravy:
  • In the same skillet, add remaining butter, onions, and celery; sautรฉ until softened.
  • Add garlic, cook until fragrant. Sprinkle flour and remaining poultry seasoning; cook, stirring.
  • Pour in chicken stock, bring to a simmer, add shredded chicken, and simmer until thickened.
  • Turn off heat, stir in sour cream, season to taste.
  • Prepare Cheesy Mashed Potatoes:
  • Boil quartered potatoes until tender. Drain and return to pot.
  • Mash with butter, half and half, cheese, and seasonings until smooth.
