Instructions

  • Halve and thinly slice the onions (you should have about 7 cups of sliced onions). Remove the leaves from the thyme sprigs until you have 2 tablespoons.
  • Heat 1 tablespoon of olive oil in a 12-inch heavy-bottomed skillet over medium heat. Add half of the gnocchi in a single layer and cook undisturbed for 3-5 minutes until the bottoms are golden brown. Transfer the gnocchi to a baking sheet in a single layer. Repeat with the remaining gnocchi and olive oil.
  • Melt 2 tablespoons of unsalted butter in the same skillet over medium heat. Add the onions, half of the thyme leaves, salt, and pepper. Stir occasionally, adjusting the heat as needed to avoid burning, until the onions are deep golden brown and very soft, about 28-30 minutes.
  • Grate the Gruyère cheese and set aside. Preheat the oven to broil and position a rack 6-8 inches below the heating element.
  • Pour the vinegar over the caramelized onions, scraping any browned bits off the bottom of the pan. Stir for about 1 minute until the vinegar evaporates, then remove the pan from the heat.
  • Add the gnocchi back into the skillet and mix everything together. Taste and adjust seasoning with more salt if necessary. Spread the mixture into an even layer and sprinkle with the grated cheese.
  • Transfer the skillet to the oven and broil for 4-6 minutes, until the cheese is melted and golden brown. Garnish with the remaining thyme leaves and a few grinds of black pepper.
