- Vegetables:
- 1 lb asparagus, cleaned and trimmed
- 2 cans (15.25 oz each) sweet corn, drained (or substitute fresh or thawed frozen corn)
- Cheesy Mashed Potatoes:
- 4 lbs russet potatoes
- 1 cup half and half, warmed
- 6 tablespoons salted butter, melted
- 2/3 cup shredded Monterey Jack cheese (or mozzarella, pepper jack, etc.)
- 1/3 cup grated Parmesan
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon freshly cracked black pepper
- Cowboy Butter:
- 6 tablespoons salted butter, softened
- 4 cloves garlic, minced
- Zest and juice of 1/2 lemon (about 2 teaspoons juice)
- 2 teaspoons Dijon mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon dried thyme
- 1 tablespoon chives or green onions, sliced
- 1โ2 tablespoons fresh parsley, minced
- Salt and pepper to taste
Instructions
- 1. Prepare the Mashed Potatoes:
- Peel and quarter the potatoes. Place them in a pot of cold water and bring to a boil. Add a generous pinch of salt and cook until fork-tender.
- While the potatoes are cooking, prepare the steak.
- 2. Cook the Steak:
- Toss the steak bites with a drizzle of avocado oil and coat generously with Cajun seasoning.
- Heat 2-3 tablespoons of avocado oil in a large skillet over medium-high heat.
- Add the steak bites to the hot skillet in a single layer (do not overcrowd). Cook for 2-3 minutes per side, flipping only once.
- Lower the heat, push the steak to one side, and drain any excess oil if necessary.
- Add 2 tablespoons of butter and 1 tablespoon of minced garlic to the skillet. Sautรฉ the steak with the garlic-butter mixture for 1 minute, tossing frequently.
- Remove the steak from the skillet and tent it with foil to keep warm.
- 3. Mash the Potatoes:
- Drain the cooked potatoes and return them to the pot. Mash with warmed half and half, melted butter, cheeses, garlic powder, salt, and pepper until smooth and creamy.
- 4. Sautรฉ the Vegetables:
- Using the same skillet (with the leftover steak juices), set the heat to medium-low. Add the asparagus in a single layer and cook for 10 minutes, turning frequently until tender and slightly charred. Remove and set aside.
- Add 1 tablespoon of butter to the skillet and toss in the corn. Cook for 4-5 minutes, stirring occasionally. Season with salt and pepper to taste.
- 5. Make the Cowboy Butter:
- In a bowl, combine softened butter, minced garlic, Dijon mustard, lemon zest, lemon juice, paprika, red pepper flakes, thyme, chives, parsley, salt, and pepper.
- Heat the mixture in the microwave for 7-10 seconds, just enough to soften it further for drizzling.
- 6. Assemble and Serve:
- Plate the mashed potatoes, top with the steak bites, and arrange the asparagus and corn alongside.
- Drizzle the warm cowboy butter generously over the steak, potatoes, and vegetables. Enjoy your flavorful, hearty meal!
