Ingredients
Scale
- 1 pound sea scallops (1 inch thick)
- 2 teaspoons Cajun seasoning
- 1/2 tablespoon butter
- 1/2 tablespoon oil
- 1 clove garlic, minced
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon grainy mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Prepare Scallops: Pat the scallops dry with a paper towel and evenly coat them with Cajun seasoning.
- Sear Scallops: Heat butter and oil in a skillet over medium-high heat. Add the scallops and sear until golden brown, about 1-2 minutes per side. Remove from the pan and set aside.
- Sauté Garlic: In the same skillet, reduce the heat slightly and add the minced garlic. Cook for about 1 minute until fragrant.
- Make the Sauce: Pour in the heavy cream, Dijon mustard, grainy mustard, and lemon juice. Stir well and bring the mixture to a gentle boil. Lower the heat and let it simmer for 2-3 minutes until the sauce thickens slightly.
- Season: Taste the sauce and adjust with salt and pepper as needed.
- Combine: Return the scallops to the skillet, spoon the sauce over them, and let them warm through for about a minute.
- Garnish and Serve: Sprinkle with fresh parsley before serving.
