- Cajun Seasoning Blend:
- 1 Tbsp smoked paprika
- 1 1/2 tsp kosher salt
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp cayenne pepper or less, to taste
- 1/2 tsp packed light brown sugar
- 1/4 tsp dried thyme
- Steak Bites:
- 1 1/2 lbs. steak (strip steak, sirloin, ribeye, etc.)
- 2 Tbsp vegetable oil, divided
- 3 Tbsp unsalted butter
- 5 cloves garlic, finely minced
- Minced fresh parsley for garnish
Instructions
- Prepare: Slice steak into roughly 2″ pieces. Set aside in a mixing bowl.
- Season: Combine seasoning blend ingredients in a small bowl, then add to the steak and toss to coat.
- Preheat skillet: Heat a large heavy-bottomed skillet over medium-high heat until it smokes slightly.
- Sear: Add 1 Tbsp of oil and swirl to coat the pan. Place half the steak bites in the skillet without overcrowding. Sear for 2 minutes per side until well browned. Set aside and repeat with the remaining oil and steak.
- Make garlic butter: Reduce heat to medium-low. Add butter and minced garlic to the skillet, cooking for about 30 seconds while scraping the browned bits off the bottom.
- Combine and serve: Turn off the heat. Return all steak bites to the skillet, stirring into the garlic butter. Garnish with parsley and serve immediately.
