  • 2 teaspoons apple cider vinegar (or lemon juice)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ยฝ cup crumbled feta cheese (about 60 grams)
  • 2 green onions, thinly sliced
  • 1 teaspoon fresh thyme leaves

Instructions

  • Prepare the Squash and Onions:
  • Preheat the oven to 400ยบF and position racks in the lower and middle parts of the oven.
  • Toss the butternut squash cubes with 1 tablespoon of olive oil and a generous pinch of salt on a rimmed baking sheet. Roast for 30 minutes on the middle rack, stirring halfway through, until the squash is tender with caramelized edges. Remove from the oven and let cool to room temperature.
  • In a large, heavy-bottomed pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the onions and cook for 10 minutes, stirring occasionally to ensure even softening.
  • Add a pinch of salt, stir, and reduce the heat to medium-low. Allow the onions to cook undisturbed for 20 minutes.
  • Stir occasionally for the next 15 minutes, checking every 5 minutes, until the onions reach a soft, golden-brown color.
  • Stir in the balsamic vinegar and cook for an additional 5 minutes. If you prefer your onions more jammy, continue to cook, stirring often, for an extra 10-15 minutes. Set the onions aside to cool.
