- 1.5 – 2 lbs flank steak
- 1 cup blue cheese, crumbled
- 2 tablespoons panko bread crumbs
- ½ tablespoon butter
- For the Marinade:
- ½ cup olive oil
- ½ cup balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon fresh cracked black pepper
- 2 green onions, roughly chopped
- 2 tablespoons brown sugar
Instructions
- Prepare the Marinade: In the glass baking dish, combine olive oil, balsamic vinegar, salt, black pepper, green onions, and brown sugar. Whisk together.
- Marinate the Steak: Score the smooth side of the flank steak in 1″ sections. Place steak in the marinade, marinating each side for 30-45 minutes, spooning extra marinade into the scores when the scored side is up.
- Broil the Steak: Preheat the oven to high broil with a rack close to the top. Place the steak scored side up on the broiler pan and broil for about 3 minutes per side.
- Add the Crust: Melt butter and mix with bread crumbs. After broiling the steak on both sides, apply the blue cheese crumbles into the scores and top with bread crumbs. Return to the broiler for 5 minutes until the topping is browned and bubbly.
- Rest and Serve: Let the steak rest for 10-15 minutes, then slice thinly against the grain and serve.
